Gentle Cooking: 40-92°C. The kettle limits the jacket temperature to 105°C. This is recommended for delicate foods such as milk based sauces, soups and porridges.
Power Cooking: 93-99 °C. The kettle sets the jacket temperature 12°C higher than the food target for fast heating. This is suitable for potatoes, pasta and reduction.
