A Genier kettle can turn 475 litres of boiled potatoes into smooth mashed potato. The same kettle, with the same tool fitted, can cook a vegetable soup and leave every diced carrot intact.
Nothing is swapped between those two jobs. The tool stays where it is. What changes is the speed and the mixing mode. Most kitchens use maybe a third of what that means in practice.
The obvious one is distribution. Ingredients need to meet each other, seasoning needs to reach the whole batch, and a 300-litre product should taste the same at the top and at the bottom.
The less obvious one is heat. In a jacketed kettle, energy enters through the walls and the base. Product sitting against a heated surface gets a different treatment from product sitting in the middle of the mass. It cooks faster and thickens faster. With milk-based or starchy products it eventually sticks.
Moving product away from the heated surface is what prevents that. It also speeds up the whole process, because heat transfers into a moving mass far more efficiently than into a stationary one. A kettle with a properly used mixer reaches temperature faster than one where the mixer is treated as an optional extra.
The Standard Genier Mixing Tool is built from separate components rather than a single welded unit. The configuration is the body, the bottom mixing arm and the side mixing arm.
The difference shows up in the kitchen rather than in the brochure. The parts are light enough to handle one-handed and they fit into a normal professional dishwasher. The scrapers are PEEK, a high-temperature engineering plastic that holds its shape against a hot kettle wall and takes years of scraping without going soft at the edges. It does pick up some colour from strongly pigmented products over time. That is cosmetic and has no hygiene consequence.
The part that matters most for production planning is that the configuration can be changed while there is already product in the kettle. You are not locked into the decision you made before you started.
A Genier kettle offers seven mixing modes. They differ in direction and in rhythm, and this is where most of the actual process control sits. Forward-only is the general-purpose mode and covers the widest speed range. Auto-Reverse alternates direction on a fixed cycle, which is what breaks structure down. The variants with a built-in pause run a short burst of mixing followed by a rest period of up to three minutes.
The pause is the setting people skip. It is also the one that protects delicate products. Every rotation drags components past the tool. A soup with diced vegetables does not need continuous circulation to hold an even temperature. It needs enough movement to redistribute heat, and then it needs to be left alone. Run that same soup continuously at a higher setting and you will still get an even temperature. You will also get smaller vegetables.

The number on a Genier controller is not a rotation count. The scale is built around peripheral speed, meaning how fast the tool travels through the product in the kettle - what the food experiences.
Speed 40 in a 100-litre kettle handles the product the way speed 40 does in a 400-litre kettle. It is not more aggressive in the bigger machine. For a central production unit running three or four kettle sizes side by side, that is the difference between maintaining one recipe and maintaining four.

This is what allows the food to be handled identically regardless of kettle size, and it is why a mixing program transfers from one kettle to another.
